Got me a pork roll n cheese sandwich for now. lol
We make the pork roll (smoked) with the hams n bacon. I will fry some in the morning with eggs & fried potatoes & onion. A little oil n vinegar on the taters.

I lied, ended up using Killer Hogs Steak Rub. I forgot to buy butcher's twine, so I used wood skewers to hold it together.

I wasn't going to take the bones out, but changed my mind. Cooking it as an appetizer, lol.

Update: TOTAL FAILURE!

As I've done numerous times, got the smoker up to temperature, placed my meat, and walked away. Well not today.

Placed my meat, set my timers, and submitted to a Christmas nap. Well needless to say, I went to check on it, and the smoker threw an error code that it overheated. Everything in the smoker was cold. I felt like the "Old Man" from the Christmas story when his turkey fell on the floor and the Bumpus Hounds were in the kitchen.

Anyways, it's in the oven know! F

I know it's more than done for most, but other than me, it's a well done household. I like medium, medium-well. It was still very good.

Did a 18 lb brisket for the family like 3 days ago on the offset..I forgot how much work that was. Needless today, I did not take a picture of it.
