FEENIX what seasoning do you use?
Game hens - cavity has butter, fresh rosemary, freshly squeezed lemon juice, black pepper, garlic powder, Himalayan pink salt, garlic powder, and onion powder. The outside is the same, except it was coated with garlic-infused olive oil.

Oxtail - Himalayan pink salt, garlic powder, and onion powder, Rib Rack spiced rub (Cajun), Old Bay with blackened seasoning, Alpine Touch Montana's special spice blend, NM red chili, and jalapeno ground pepper - I think that's it. LOL!

Both were marinated overnight.

I also have some white bass marinating for later on.
