Turkey breast recipes

Hello all, I was fortunate enough to get a gobbler this spring and I am looking for a new recipe.
I normally put into a brine of salt water with a bit of sugar over night, rinse and blot dry and then season with salt and pepper. I layer bacon on top of the breast and into the smoker.
It's good this way but I'm looking to try something different.
I appreciate any and all replies!

Add some sage, rosemary and thyme to your brine. Fresh of course, and bruise it heavily in the brine. Take what is left and chop it really fine and cover the outside of the breast with it. Smoke or roast.
 
#9 Griswold Dutch Oven+ tite-top lid, a guy can take a good knife fillet/debone the whole turkey on bread board, takes about 15 minutes to fillet the meat off the bones. Ya end up with about a 15 inch by 18 inch rectangle of turkey 1/2 to 3/4 inch thick with the skin on. Start skin side on the breadboard, take a box of Long Grain and Wild Rice mix and sprinkle that with the seasoning pack on the turkeys meat side, add some chopped shallots, pecan halves, celery, etc. then just roll it up. Can put a couple ties of butchers string on the roll. Pour couple tablespoons of olive oil in the Griswold and dump in a bag of baby carrots then, set the turkey roll on that bed of carrots.Put a couple pound bag of those small potatoes around the turkey roast, sprinkle in 1 cup of dried green split peas and a can of Wild Rice Soup. Add a bottle of Spring Water and put the lid on cook at 350F for couple hours.Check about 1/2 way thru and add another 1/2 liter bottle of Spring Water.

Love the Dutch oven recipe! I'm going to blow the dust off of mine and put it to use.
