I take antelope steaks in Viva Italian dressing for 24 hours, then grill, then cut up for fajitas! Outstanding!! I also use the ground for chili, tacos and jerky. Makes some tasty mean ghost pepper jerky.

Our family loves Antelope, but then again my family prefers whitetail meat over beef. My go to recipe for venison/antelope- peel a whole bulb of garlic, toss into blender, add 1-1.5 cups of vegetable oil, blend on high for unroll blends very well. Put venison steaks into bag/bowl, pour oil mixture over them, mix. Refrigerate at least 2 hours, longer is better, have done up to 2 days. Pull out of oil, seadon with coarse salt and black pepper, sear in a cast iron skillet, then finish off in the oven on top tack under broil for a couple minutes. Mefium rare, rest a couple minutes and enjoy.
