I know they make them, but I have never seen a 180gr 7mm, and the 280 and 7REM can't push a 175 at that speed, but some of the key 7mm's missing that can are the 7STW, 7 RUM and 7 Bee and 7mm Firebird
Those speeds ARE achievable in the 280AI. I've tested 180g Berger VLDs up to 2935fps without any pressure signs (58.2g RL23). 24" Bartlein.

Have run 168g VLDs to 3060 with zero pressure signs as well (60.0g RL23).

My true love is the 7mm .284 from the 7x57 to the 7mm Rem Mag it will work. Just as long as one does their job on the trigger & scope. Bullet placement number # 1 . Love them Nosler bullets Partitions & Ballistic Silvertips-AccuBond and even their BT's depending on the game. Running 28 in tubes on two of mine one the 7MMRM and one 280 AI.
 
Barrel twist can be a big factor if you decide to shoot mono's down the road. I've never tried above a 168gr in my 284's. The 160AB has been the sweet spot for most of them. May try the heavier though just to see how they perform.
 
Which ever you pick go with a long action for sure. Even in the saum. I have 5 saums and all are long actions except 1 and I wished it was a long for sure. Let's you take the 180's out to their limit. I'd go with 1:8.4 or faster. I have a 9 twist but I shoot 175's in it.
