150 degrees @ 9 hrs.
Kicked up the temp to 210 degrees, will increase in small increments.
 
My neighbor invited me to pick some currants Yesterday. Making BBQ sauce with them today. St Louis ribs this afternoon. I substituted the greeen chilies with a Cherry Bomb pepper from my garden.

I have been making it off and on since I was a kid, I consider my Everedy bottle capper a family heirloom.

1 bottle Zatarains root beer concentrate
3lbs sugar
5gal + 1cup water
5gams champagne yeast

heat 1 cup water to 95-100f add yeast to activate let stand 20 min

use your 20 min to add RBC to sugar and mix until blended, add 5gal water stirring until sugar is dissolved and well mixed, add yeast water and stir. Bottle immediately. store bottles on their side at 70- 90F for 24 Hrs

After 24,hrs open a bottle every day and test for bubbles, when satisfied refrigerate immediately or bad things can happen.

Picture number 4 are the bad things right?
I get it.I used to make wine in my younger years and had explosions when I forget about replacing an auto burping device that our dog ate.
