Hey All,
Feenix just fired me up with an incredible pronghorn dish so I thought I'd thrown in one of my simple faves, game tacos. Many already have a gourmet mix in their recipes so this is more for those using the store bought mix packet.
I like using a nice fat doe or cow or other female to add some fat but most butchers are cutting with maybe %10 beef or pork trim so that's enough. If using pure lean game, I'd brown a few pieces of bacon before browning the meat.
1) In 2 tablespoons of oil (unless bacon was used), brown about 1lb meat. Halfway thru, crush in 2-3 large cloves of fresh garlic. (A quality garlic press is worth its weigh in gold, in a culinary sense.) The fresh garlic is what makes this a huge improvement over packets.
2) Add 1/4 - 1/2 cup water. Daddy like his tacos juicy so I tend to go to the half cup side. Experiment.
3) Mix in 1 tablespoon Cumin Powder and 2 tablespoons of your favorite red chili powder. I use the standard dark red chili found in stores, complemented by a pinch of either cayenne or our home grown thai dragon chili. Like all recipes, tweak as you see fit.
4) Add salt to taste or for even more flavor, try using some chicken bullion powder.
5) Simmer for about 20 minutes over low heat.
Do you taco thing with fresh shredded lettuce, onions, tomatoes, salsa, etc. and beer. Cheers All
