If I were to stay with the 7MM Rem mag. I know I won't push 180's at 3000FPS. But would looking at extending freebore be a good idea? Is this a scenario where I should seat a few bullets at desired OAL keeping base of bullet at neck/shoulder junction and chamber for that length? Would throat erosion eventually have me seating to far out?

More freebore is not necessarily a good idea. What happens when you start wearing that throat down and you need to get back to where you started. Just makes things harder. You should ideally pick a bullet or 2 and have your chamber set up to shoot those.
