Bullets Pencilling Through

Where I hunt there are greenbriar BlackBerry and Devil's Walking Sticks; not to mention cutovers! You don't even want a deer to run, much less run more than 20 yards if he gets into that stuff. 50 yards and it can turn into quite an ordeal to get him out. We have thickets that are impenetrable.
The only preventive is overkill with fast cartridge, reliable expansion and penetration so hunters here need a fast put down. Just employ Bischof's Rule of Extreme Overkill.
For SERIOUSLY DRT, I'd use, a .270 WSM with, 130 or, 140 grain, BERGER ( Hunting Type ) @ 3,300 FPS or, @ 3,200 FPS with the 140's and Do, High Shoulder Shots,.. EVEN Elk, DON'T Move,. after,.. Impact at,. "Normal" Ranges !
Yup,. probably, "Over Kill" for small Deer, tho ! LOL !
NBT's would Be, a Great 2nd Choice for, "Boiler Room", shots !

I feel your pain (literally). Add rattle snakes to the mix. At least a blood trail gives me an idea where to look.

That's what I use! 270 WSM with 150 Fusion at 3,080 fps. They drop or don't get far. This one didn't go5 yards.

At your velocity I'd run a Nosler ballistic tip, for rib age shots.
Accubonds for high shoulder shot, no exit or blood trail required.

If the deer are that small bodied the BT hunting will exit no problem, at your velocity.
Precision out to 500yds is impressive with them. I have not tried them beyond on paper or animals,
Funny you mentioned the Nosler BT. I'm in the middle of working up a load right now.
 
In my 7 mag I was shooting the 150 3200. In my 280 AI the 140 3200 and in 7/08 the 120 at 3100. The 150's have been 100% exits. The 140's I don't have many data points yet. The 120 7mm is a tough bullet and penetrates well. It's jacket is thicker than the 140. For years I used the 150's in 30/06 and many bang flops.
From what I've been told is the 120's and 150's have the same jacket thickness and the 140's are thinner.🤷🏼‍♂️
But I do know that the 140's act like a lightning bolt when it hits them.
The 140's at 3535fps is devastating 😁, just bang flop, same at 3250fps.
I haven't run the 120's or 150's yet.
 
120s at 3500+ in the 7 Mag are flat NASTY on deer. I loaded 50 of them for my FIL about 20 years ago, he still has about 30 of left, and has killed several deer with them. To date he has not had a deer go further than straight down.

After he shot the first one, a large whitetail at about 200 yards, he called me and asked me "What the hell did you load those rounds with? I've never seen a deer go down so hard!"

He refers to them as "Thor's Hammers".

It's like you cut their legs out from under them
 
Any good expanding bullet moving more than 3,000 fps will be a fast kill if the bullet is big enough. Depends on what cartridge you employ. At longer ranges, bigger and faster is better.
 
I have had the complete opposite happen with ELDX, using both 200gr 300 win mag and 143rg 6.5cm. I NEVER get an exit. I never lost a deer or elk I hit with them, but also never had an exit wound for a blood trail and have never recovered a slug. The bullet did its purpose, killed animals so I dont worry about it all that much.
