Just wanted to show a little about how I do it.It's really not that hard,just takes time.I'm retired so I make my own time.I grind and season one day.Then I stuff and refrigerate the next day.Then smoke,let cool and refrigerate the next day.Then vacuum pack and freeze.I could condense the time,but why?,I'm retired.Wow... really rubbing it in. Just turned 70, been retired retired for 11 years. Just like I tell my friends when I do their barrels. If you have to ask me when it will be done, it goes to the back of line. Just a hobby I started, bought the machines in 2015 so I can do my own barrels. I run the machines when I feel like it. That may very well be at 0100. Then again, sometimes I do theirs as they wait.
No rules, no schedule, just fun.

Brown sugar? That's pretty close to our standard pork breakfast sausage recipe- just no fennel. We use fennel in our Italian sausage.My family worked at a meat processing company for many years. My uncle was sausage supervisor so we learned how to make our own fast. This has been our Go To for venison breakfast sausage and I can't even estimate how many breakfast sandwiches with egg and patty we ate on tailgates. Pretty simple recipe.
