Rem 700 7mm re-barrel advice?

There's nothing wrong with barreling up another 7Rem mag but that's not very interesting. Based on your post, I'd go with the 7PRC in an 8 twist. Factory ammo has been popping up here & there. I passed up on several opportunities because my rifle hasn't been completed yet, I'm still waiting on the barrel.

7PRC components will be much more available soon, IMO. Dies have been out for a while if you reload. Heavy 7mm bullets have also been available. It's only getting brass that's an issue at the moment. I can see ADG and/or Peterson jumping on the bandwagon pretty soon. Hornady brass will likely be the first stuff available and internet retailers are taking backorders.

...if we could only trust the reloading industries famous " readily available soon" line, after the last 5 years of our tongues hanging out... the difference hain't worth the risk..that old warhorse 7mm RM will handle anything anyone wants handled with minimal anxiety....

Here's a link showing Rem 700 could come with either a 1-9 0r 1-9.25 tw. It looks like current ones have 1-8".
