Interesting. I've never had prickly pear and did not know that was a thing people ate just grilled like that! But I can image it's yummy.

One of my all time favourite hot sauces (and I've tried over 100 different kinds at this point) is Marie Sharp's Green Habanero…

First ingredients are indeed green habaneros followed by nopal prickly pear cactus. It is incredible AND has no salt added which is getting to be an important consideration for me.
My house in Tucson has a couple of prickly pear cacti in the front yard, and I used them in omelets with chorizos. The fruit is pretty darn good, too, except the birds always beat me to it.

They are really good, a fleshy kinda tart cacti/vegetable, the taste is hard to describe, but they are very good. Also eat them mixed up with what they call here pico de gallo, fresh diced tomatoes, white onion, cilantro and serrano peppers, salt and ground black pepper. For this you have to dice the pads and boil them at least once, to release some of the aloe Vera. Due yo their high aloe vera content they are very healthy food. Eat them with tortilla chips or warm corn tortillas.

Also eat them with Carne con Chile, the one with pork meat, delicious with some corn tortillas.
