Mountain Grouse is some good 'eatin -- fall season only though so gotta deal with lots of other hunters as it overlaps with big game ( elk, deer, bear)
Probably less hunters on the plains but most of that land is private.
If you want to "pay and play" there are outfitters and bird clubs too
Turkey is a fun hunt too since you said you have a shotgun-- 2 seasons too ( spring and fall)
