I know what you mean eating them with a spoon ! If I get into canning , encouragement from this thread I'm gonna make my own !I love cowboy candy! My friend made some last year but with a blend…jalapeños on the mild end, long red cayennes, ghost peppers, orange habaneros…it's got some kick. The hotter the better for me. I've never made cowboy candy but last year pickled a few quarts of jalapeños….ate em all in 2 months haha, I eat them with a spoon. Pickled with black pepper, dill, garlic, and dry mustard added to the brine. Delicious! My sister grew these jalapeños and they were the hottest jalapeños I've ever had. Normally I can just munch on them like a carrot…these ones made me sweat hard!

how long do you pickle the eggs?I use beets in my pickled eggs. I'll have to boil up a couple dozen eggs now and pickle some with beets.
Seven to ten days before eating. I don't know how long they last after that. I keep them refrigerated and have lost them toward the back of the fridge for two months and they were still great. I have two dozen going into the brine in the morning.how long do you pickle the eggs?

When I have done this in past, I have found that my wife was the "clock or calendar" when they had to be removed. Same with pickled deer heart curing. My wife lived in Chile for a semester and traveled around South America. She and a friend were at an event and a street vendor was selling grilled/rotisseried meat on a stick, calling "gattito, gattito". Friend got some and while muching away asked: "what is this?"Gato taco ?
