I'll jump in on this one, and hope I don't step on anyone's toes.
The Vermejo has a very good road system, and at least 3 full time people that work on the road crew year around. January weather could be a crap shoot, but that would not stop me from going on a hunt then.
As far as seeing the big house you can ask, but I will tell you the ranch is in the middle of a remodeling job there that I believe will take over a year to complete. ( they started last summer own it) You drive by it to get to the game barn so at worst you will see the outside of it and the main lodge.
As I said before, these hunts have a very high success rate, I spoke with one fellow this past summer fishing on the ranch that told me he was 14 for 14 on Vermejo cow hunts. This is a great value in an elk hunt.
I'll be on the ranch this time next week and will not be home until the end of September, but if I can help anyone in any way, get with me this fall. Best place to eat in town in my opinion is the Oasis.
