Bullet choices

I think an SST will be just fine. Maybe stay away from the scapula at close range. I did crush a bulls shoulder at fairly close range with a 154 sst out of a 7 mag but some say they might explode at high velocity and not make it through.

It will work just fine but if it were me the 178ELDM would be my first choice
Me too, I don't have much experience with Berger's but I do use the 225 eld m in 300 win mag and it does what I need it to. That or the TMK would get my vote.

pretty much ANY bullet out a 308 will be fine for mule deer, don't overthink this! So long as they expand and don't pencil through (though even that will kill, it's just needlessly cruel and you might lose an animal…but all kinds of roughly deer sized organisms (bipeds in this case) have met their end to 30 cal fmj bullets. Not suggesting that of course. At .308 velocities bullet blowup and shallow penetration aren't usually an issue, but failure to open at distance could be which is why I vote eld m or tmk. Those tipped match type bullets are more likely to fully disrupt than a conventional otm.
