Any of you guys ever tried the neck (any annimal), just cut it like the you cut the ox tail and slow cook it in oven ?

Pork neck,beef neck.Poor as a kid and 7 kids ate alot so mom made use of the little money we had.

No Sir, but I had a few visits at Barksdale AFB. I learned to make a roux from my late Dad. When my Dad retired from the US Navy, his Admiral hired him as his cook.
