Do I need a coat of primer on a stock?

Clean it well with acetone. Then paint away. I have done a bunch.

What type of paint? Rattle can? Airbrush? Sponge?

A good primer may provide better adhesion but only if you sand the stock first, IMO. I've done both and the stock that was not sanded has seen much more use and has only a few insignificant wear spots where I, and only I, can detect the original gray stock color.
 
Just use your lightest color first and give it two coats.

Be sure to put a clear coat on it after for ruggedness.

I have used the Brownell's Alumahyde on some and once cured (two weeks) it will stand up on the brake well. It is pricey, but not as much as cerakote.

Recently did this with Alumahyde.
