Where do I shoot them?

I usually aim for a little higher than center of the big red dot from this pic I found online

Unlike a lot of people here, I actually want to leave the heart intact to cook later. I'm also willing to sacrifice a bit of shoulder meat for it. I'm far from the most experienced hunter but I've killed somewhere around 50 deer in my 15-20 years of hunting, and been there for easily another 1-200 and I've yet to need to track one. Furthest I've ever seen a deer go was a 20 gauge slug through the heart leaving almost nothing left of the heart, but didn't even seem to touch the lungs. Deer ran about 150 yards (but still within sight) and then collapsed. Double lung mid to mid-high shoulder seems to drop them a lot faster in my experience. Usually 10 steps at the furthest Especially with a fast round like 257 wby, 28 nosler, 30-378 wby, etc.

There's guys who have killed or at least witnessed thousands though, and those guys have a better sample set than I to tell me how wrong I am. But that's my .02.
