for coatings, I use brown sugar-molass sp. I put
my seasoning in the basting sauce. feral

Cube it up into bite size pieces. Add salt, white sugar, pepper, garlic powder, onion powder, chopped jalapeño, and fresh Thyme. Mix together and let sit.

In a sauce pan, reduce dry (cheap) red wine. Once reduced by half, add wine to the pork belly and throw it in the oven at 425 for 1.5 hours.
