L! My close friends said the same thing.Did you do that on a smoker by any chance?
In the oven for 2 hours at 350F and 1 hour at 425F.
Looks great. I'm thinking of picking one up and smoking it, rocking stuff if it's done right.
I'm sure smoking would be great as well but "if" you want a crispy crackling, you might have to finish it in the oven. Good luck!

I'd like to bury an antelope back strap right in the middle of that. I don't eat much other than wild game, but I'm a sucker for some crispy pork fat!!! I can't move for about four hours after I eat it, but still do it a couple times a year.
Looks like you have that down to a science, dang, now I have to go to costco and buy some pork belly. Count me out for fishing on Sunday, I'll be on a pork fat hangover!!

Just a little southern trick you could also include is a thin layer of Peanut Butter on it before you roll it up.
