I have to agree, not much is better that Venison Pastrami unless it's Venison Corned Beef! Once you corn it, make venison has with it, over easy eggs and sourdough toast! I double the Hank Shaw recipes!

Hank Shaw has a pretty good basic recipe for pastrami, tailored for goose. I generally follow that but add extra juniper and brown sugar. I've made a lot of goose pastrami.
