Why not build a 7mm Wby? Same case, with heavier and higher BC bullets.
Any magnum long action will work. Your best bet if you plan on going really custom is a Remington 700. It has the largest aftermarket following.
or stay with the 270 and run the 165gr matrix bullets with their .650BC instead

I called McWhorter yesterday and they really acted like they were above working on a rifle. He even told me they "didn't have time to rebarrel my Accumark to 6.5 Wby", and that they "only have time to build their own rifles from scratch and no longer work on anyone else's guns, unless they're ordering a new complete rifle from them."
That right there ****ed me off. Screw McWhorter if they think they're above working on guns that already exist. My money's green like everyone else's...

The 7mm 180 Hybrids have a .674 BC, just FYI.
that's cool, i'm as big a 7mm fan as anybody. and my 7x300 loves the 180s but I like them coming out of the larger case for the edge in velocity.
I too am looking to build a 270 weatherby but i'm wanting to do an improved version.
