I had a couple of things to celebrate this morning. First off #45 is now #47 is headed back to the WH. Second and actually the biggest reason for me to celebrate is I hit my goal weight!

I'll be the first to admit, I over cooked the pancakes this morning because I got up too early. They were a little dry as I had them in the oven on the lowest setting 170⁰ waiting for my wife to get up. They're also just dark because of the Cinnamon in them. Usually these are very moist and fluffy pancakes, when I'm not up a little over two hours before my wife.

You can add anything in you want to these pancakes. I've thrown just about every berry you can imagine into these, sugar free dark chocolate, lemon, and Key lime. They're also great plain, but I think my next attempt will be pumpkin pie.

This is my take on the Pioneer Woman's Edna Mae's Sour Cream Pancakes recipe. I substitute the sour cream for nonfat Greek yogurt, use King Arthur Keto flour, and substitute vanilla extract for two scoops of vanilla whey protein powder. I dice up half of a medium sized apple and add about a tablespoon of cinnamon to the batter. I get about 10 pancakes out of this mix that are 3.5-4" in diameter or about 1/4 cup per serving.

The syrup is just 1/4 cup Lankanto Cinnamon Maple sugar free syrup, a tablespoon of bacon bits, and a couple pats of butter. I either heat this up in a small sauce pan or in the microwave. This is two servings unfortunately.

I started seeing a nutritionist on Feb 20th, 2024 and weighed in at 256 lbs, I also had low T and 91% insulin resistance. Nov 6th, 2024 I hit my original 50 lb weight loss goal! I'm guessing I'll be about 205-206 when I weigh in next time at the nutritionist. My ultimate goal is to hit 195-200 lbs when I weigh in at my nutritionist office, not naked in my bathroom.

When I started, I was pretty basic in my cooking. In the last 8 months I've found things that I can substitute and still eat the foods I enjoy. King Arthur's baking company Keto products and Pete's Pasta have been huge, as well as Orowheat Keto breads.

Last night my wife and I enjoyed a decent Beef Bourguignon while watching the political commentary. However, it didn't have enough fat in it to keep Julia Child from rolling over in her grave. Still it was a great fall stew to enjoy.

That's a 50 mile round trip for me, and Trump hasn't fixed gas prices yet. They're really bad but the McGriddle was my favorite. 🤣
Congratulations ducky! 200 lbs is a worthy goal……unless your only 5'1" tall! 😁

This was taken last Sunday, wearing 34 waist jeans for the first time in years. I should have sized down the shirt as well, but I wasn't thinking about a photo shoot my wife had arranged when I bought new jeans.
