Tips on sausage makin’

If you have ever eaten Cajun Andouille sausage it is heavily smoked.Some just smoke for 4 hours but in LaPlace Louisiana they smoke through the entire process but the owners will not give out information as they want you to buy their sausage.People come from all states to buy their sausage.In all the years I have made sausage I have never had tough casings like this.They are edible and good but mostly for Gumbo's and stews..Thanks for all help.
