Spatchcock turkey

This is my first time trying it on turkey. I have tried it on chicken and game hens before, though. It turned out better than I expected, considering I was experimenting with temperature, cooking duration, spices, and aromatics. I meant to post this last night but got busy quickly when guests started arriving ...

I've thought about doing a spatchcock, but I got lazy as usual and went with the Smokefire and a water pan under the grate/bird, Cherry-wood and watch your temp. seems to be the winner for me.

It's one of my wife's priced possessions. They are Spode Blue Italian (https://www.spode.co.uk/). She went crazy on her purchases when we were stationed in England from 2000 to 2003. She collects them and has a couple of curio cabinets full of them.

I spatchcocked a 14# turkey and cooked it on the Traeger yesterday, it was fabulous. Only took 3 hours at 225, then a 20 minute finish at 375 for that nice crispy skin.

Mine was 17 lbs and took 90 minutes—30 minutes at 450°F and 60 minutes at 350°F —to reach an internal temperature of 160°F (breast).
