I recently tried to smoke some salmon for the first time. At a minimum $1.00 per ounce ($16.00 / lb.) for store bought smoked salmon, I had incentive.
Bought salmon fillets on sale for $4.99 lb., filleted the skin off, cut them into pieces about 1/2 hand size, rubbed lemon pepper and sea salt mix on both sides, covered and let them set in the fridge overnite, then smoked them for 2 1/2 hrs at around 125 degrees. Used heavy duty foil on top of the grate with non-stick spray on it and turned the pieces over after about an hour. Ran out of pecan wood and finished up with hickory. They are really good, and get even better after sitting overnite. (Like good chili).
Finished up with about 5 lbs smoked, for a total cost of $37.00. Comes to $7.40 / lb. or about $0.46 / ounce. Big hit with my family.
