This would be a build off my action so I'm not considering a Kimber. 280ai is being considered though along with 6.5x284 if I stick with a std bolt face. The gun will have a break regardless if cartridge.

It seems there is some information missing here. The larger the powder charge and the more constricted the bore the better a brake works. So a 7Mag with a great brake is just as light a recoiler as the .280 AI. The brake only works on the powder. A very good recoil pad works on the initial acceleration of the bullet and powder. The brake only works on the red hot gas the powder became after the bullet passed the brake ports.

having known a few sheep hunters with the mountain ascent, I'd rather build one in the 7-8lb range. I had the chance to shoot one of them at 200yds once, and the rifle was so unbelievably twitchy it was a wonder I could manage a group at all. The pencil thin barrels heat so fast that even the second shot was a dicey proposition. I'd do a 280ai and shoot for around 7.5# loaded.

and the recoil in that MA was sharp and unpleasant. it was a 280ai shooting 162's

Why should someone tolerate shooting when they can actually see hits and enjoy shooting with the aid of a good brake?

I didn't suggest that they should. Some choose to because they don't like brakes or have been convinced by others that tolerating the muzzle blast from a braked rifle is intolerable.
