How do i choose a stalk?

So I am excited to heat my barrel is ready to ship, but until then I have been researching stalks. Nowhere do they talk about barrel contour. Several people have suggested HS Precision. It looks like they build after you order it. Do they cut the bed or is that my problem? Any suggestions?
