Alaska caribou for Elk/Mule deer

I live in rural Alaska and where I live we get caribou in the thousands walking a few miles from our homes. I have a boat, snow machines, a side by side and fourwheelers. Caribou are pretty small so we can process the whole thing in a day. (by process I mean make burger, steaks, roasts, stew chunks). I'm interested in Mule deer/ Elk. The best time is shoot them is usually around in August/September. The photo was last august.
