7-300 WinMag will not out-run the .28 Nosler. The .28 Nosler holds a fair-bit more capacity over the WinMag case. There are guys on here pushing the Berger 195 Elite Hunters over 3,150 FPS from a 28" 1:8 twist barrel. So, safe to say a 26" barrel should put you around 3,050-3,100 with a 195 and RL-33 powder.I am really new at this long range stuff too, but to me, high bc bullets moving fast is how to get it done. I couldn't find any info on the 7-300WM, nor does the Hodgdon online data site list the 7mm 195gr SMK. However the 180 7mm in the 28 Nosler leaves the barrel at (max listing) 3050fps. Just at a guess, the 7-300 might do better.
Roy was not happy with the 340, from what I have read. He only bested the 338WM by a small margin. The company later necked the 378 down to 338cal, and it Smoked the 340. Hodgdon does not show a listing for the 300gr 338 SMK in a 340, and what I saw was really slow, even max listing. I would go for it. Just saying.

All the 7mm chamberings listed are fine LR deer cartridges I'm sure. However I think you would be robbing yourself if you didn't try some higher BC bullets in your .340 Weatherby. Give the 250 Berger, the new 230 or 270 ELD-x, or new 265 LRAB a try. You already know the rifle is capable of great accuracy...why screw up a good thing?!
Good point. I shoot a 338-378Wby . One source. Kinda frustrating to have to pay at best $70 for 20, at worst, $90 for a cartridge that has been around for as long as that one has. I'm thinking, tho, that Nosler may go the Lapua 338 case route, and flood the market. Literally. I saw pictures of a warehouse full of 55gal barrels, presumably all filled with 338LM brass. And the price came down, and now it's EVERYWHERE.I have been shooting the 7-300 weatherby for several years. Started with a 7 stw then switched to the 7-300 when stw brass got scarce. They are virtually identical. I used stw data to work up loads. Weatherby brass is plentiful and I have been very pleased with the cartridge. I am shooting the 180 hybrid at 3150 and not a max load with imr 7828. The only drawback I see to the 28 nosler is only 1 source of brass.
If I dumped the 340, I would want to better myself by going to the 338-378. 340 Barnes 250 gr. XFB - B.C. .521 highest B.C. listed, fastest fps listed 2836. Same Barnes manual and 250 gr. XFB bullet out of the 338-378 fastest fps listed is 3042. The 7mm-300 is a very good gun but won't buck the wind as good or shoot as far. Again it all depends on what you want to do, how far you want to shoot and how accurate you demand the rifle to be. Maybe the good all time stand by 30-06 will be suitable. Have fun with whatever you decide to go with, and hope 2018 is every ones best year ever.And so, we're I he, I believe I would dump that 340Wby in favor of the 28 Nosler.

Correct, you are, and for all guns. Always coming out with a newer bullet too that is reported to be the best thing since the spear!! Got to take everything with a grain of salt now a days till all is proven one way or another, get your wallet out again!A bit off topic. My 1978 sierra manual says
