I know it's an oddball, but anyone know of any available die sets?

Super simple. Purchase a 7x57 full length bushing die. Select the proper bushing for you're bullet /brass preference and rock on.
6.5X57 dies are available, but it would be challenging if the actual improvements (shoulder angle, neck dimension changes, etc.) are unknown. For instance, my .338 Thor is a .338 NMI, but my reamer spec is different from the SAAMI .338 NMI.
