Howa 1500 Mini Lightweight in 6.5 Grendel would be perfect. It weighs less than 6 pounds. The 6.5 Grendel is more than adequate for the ranges you mentioned and has a light recoil.
FYI the Howa/Vanguard action does not have a Sako style extractor it is a M16 style extractor. That is important since the M16 style is a much safer than the Sako.

The Creedmoor is easy to load for.
For best accuracy get the Hornady Full Length Bushing die set. I don't recall of the top of my head what bushing size I am using right now.
H4350 seems to work best with the 140gr bullets.
I use CCI BR2 primers.

For simplicity I would stick with the 300 Win Mag or if you want less recoil switch to the 7mm Rem mag. The 264 Win Mag is a good choice too but a lot harder on barrels than the 7mm or 300.
