We occasionally had to deal with bad bears at Philmont when I was working there. Always made for a big adrenaline rush before and during and one heck of a crash after.
They can and do offer faster TW's in some factory offerings as more and more heavy/long for caliber bullets keep coming out and in trying to meet the rising demand for rifles to accommodate them.
They're catching up slowly it seems introducing faster twist rates in newer barrels in some specialty "long range rifle" offerings but not across the board.
Honestly I had the same problem with 3 different SiroccoII's fired in the 300wm, 7mm STW, and 260 Rem.
I had never seen a bullet flatten out like that and turn 90 deg or better in my entire life till then.
I hit a little WT buck at 200yds with the .260AR running about 2750mv. I shot a tad low...
I like the 870 because it's probably the closest thing to a perfect all-around weapon ever invented.
Knowingly going after a wounded bear or similar situation to me is independent of what I'd carry for general bear defense when hunting or fishing.

Ruger makes both an Alaskan and Guide Model in 375 with a short, 20" Bbl. I bought one for my first trip to Africa and it performed outstandingly and was quite easy to handle in the thick stuff both there and in Texas.
The problem with any and all of them is the need to put a fatal shot where it belongs under the stress of an attack.
At least the semi autos give us more opportunities to succeed in those few often fatal seconds.

The 300wm is the Toyota Landcruiser of centerfire rifle cartridges. You can take it anywhere, hunt anything in N. America with confidence and never feel undergunned.
I do however think the 30PRC is going to be the 300wm of this century by the time all is said and done as the wm was for the last.
