I shoot a Model 7 Rem in 7:08 Ackley Improved with a 20" barrel. I use Nosler 140gr. Bullets that coronagraph @ 2850 fps. This is my antelope rifle and is a joy to use.
I have a gain twist barrel on one of my 6.5 Italian Carcanos, the other Carcano does not have a gain twist barrel. The biggest advantage is when you are shooting cast bullets... less chance of stripping rifling and leading the barrel.
I would go with rifles in calibers that not everybody has. I suggest a 220 Swift, a 257 Roberts, a 284 Ack Improved, a 358 Norma Magnum and a 416 Rigby.
Two things to note:
1. Military Brass is thicker and will hold less propellent
2. Load to the velocity (pressure) of military ammo used in an AR, this is usually will be at a lesser velocity.

It depends on the action your 7mm rifle is. If it is an semiauto then the answer is yes. If it is a lever action then the answer is probably not, depending on the magazine length. If it is a bolt action then the answer is no.
I've killed elk with my 30:06 AI (200 gr. Nosler partition) and my 8mm Rem Mag. (220 gr. Hornady). Any of the cartridges you listed will be fine for Elk. I would choose the 280 AI loaded with a Nosler 175 Grain Partition bullet.
